Taste as you go: Slovenia's Kabaj

Slovenia's Kabaj is at heart a love story. Jean-Michel Morel and Katja Kabaj met in Northern Italy and soon later were married. The Kabaj's had grown grapes for generations, but Morel was a Bordeaux-trained winemaker who thought, "hey, let's make some amazing, world-class wines in Slovenia." And that is exactly what they did. He uses minimal intervention and long ageing to craft elegant wines that have unique degrees of skin maceration, from 7 days to over one-year. He is a rockstar and has quickly become seen as the "Gandalf of winemaking" as a result of his Covid beard. He is a unique character and has drown on his French winemaking background to show a different side from the often bitter and massive acid attacks of other skin-contact wines on the market! Enjoy.
